Because the betas seem to lack bug fixes from April that are in the
sources at webkit.org.
(E.g. <http://bugs.webkit.org/show_bug.cgi?id=12778> aka
<rdar://problem/5028153>)

Is the Apple version of webkit based on a particular snapshot from webkit.org or
are each fix independently accepted or rejected by Apple?
