It looks like MDB Tools might let you do that in one step (convert an Access database straight to MySQL or PostgreSQL).

It doesn't seem trivial to build on Mac OS X (at least straight from CVS), but maybe you could find a pre-built binary or use a Windows or Linux box to do the data transfer.
