Take a look at a program called Iceberg. We use it at work to create
customized installers for my school. It allows you to customize
install locations & the documentation is fairly good as well.

I found out how to set an environment variable by editing a file
called environment.plist in a hidden directory called .MacOSX, but
that's only useful for us tech heads since we can edit a file and be
on our way. Is there a Mac way to set a variable in a "registry" that
I can use across our native and/or X11 applications? Or maybe a
command line program I can run which sets this variable rather than
hacking around an XML file?
