Ooh, I think I know the answer to this one! I believe it's because launchd only understands the /tmp/launchd-xxxxx/:0 socket.

Close enough. Launchd is the one that actually creates and listens on the /tmp/launchd-xxxx/:0 socket -- when something touches that socket, then launchd starts X11.app, as dictated by the LaunchAgent plist. So, if you don't touch that socket, launchd never gets involved.
