The "From " line is not a header. It is (optionally) added by the
MDA from the FROM field of the SMTP envelope. The corresponding
header is Return-Path (added when the message leaves the SMTP
environment). But this FROM address can initially be set by the
sender of the message.

You can ask Mutt to force the FROM address to the "From:" header by
setting $use_envelope_from (the description in the manual seems to
be incorrect as it doesn't correspond to the source code). This is
done with sendmail's "-f" option. If this option is not provided,
the MTA uses something like <email@hiddenn> (well, at least
sendmail and exim4, I don't know about postfix).
