Don't boot from the CD, just put it in your drive and lauch the Install Bundle Software app, I can't remember its exact name. You'll then be able to install X11.app.
You don't even need to do that (and actually, it's not Install Bundled Software, it's something like Optional Installs, I believe.)
In any case, the X11 installer is in /System/Installation/Packages/ X11User.pkg on any Mac OS X 10.4.x installation disc.
Once installed, then run Software Update to ensure that your X11 installation is up to date.
