I did try this but IIRC the windows still appear on the remote Mac (where Matlab resides) and not the Linux machine where I'm logged in

It is my understanding that the Mac version of Matlab is only capable of displaying on the local display, unlike the Linux version of Matlab.
Most of the matlab GUI runs under Java which uses aqua windows. Only the graphics windows run under X11. You can have a 'true' X11 version of matlab by starting it with the -nojvm option from the command line.
