Looks like there's a problem with your download of wine's sources being
corrupt, not with X11 not working properly.
Try redownloading the latest sources (wine-1.0-rc1 iirc) instead of ones
that are almost a year old. Or as an alternative to compiling wine (since
you're having issues even getting the source), You can just install Wine
from http://thisismyinter.net/?p=29 - It's an installer for Darwine based
off of wine-0.9.61.
Then follow the rest of the steps from that link you have as needed.
Don't forget to update to the latest Xquartz build as well.
