That has nothing to do with the X11 font caches. Those get rebuilt (if stale) as part of startx. You can force it yourself by running:
font_cache -f -v
sudo font_cache -f -v -s

If you installed xorg-server from MacPorts, and you're using /Applications/MacPorts/X11.app, you should have them all. What does X11->About X11 report?
