Nathan Walker is doing a series of podcasts and videos on WebObjects. See http://www.visionworxpro.com/cgi-bin/WebObjects/VWShop.woa or iTunes podcasts.

In the 4th episode of the series he provides a detailed tutorial on constructing a project template. Although his orientation is WebObjects, this first 15 minutes of the episode on templates is directly transferable to any other type of project.
