I'll second the recommendation for "Step Into Xcode".  It does an excellent job of staying focused on how to use the dev environment.  There is even a good discussion of relating make/open source projects to Xcode.  It won't teach you cocoa or objective c but that is a good thing.

Whatever you do, don't buy "The Mac Xcode 2 Book".  Complete waste of money and time.
