If you're outgrowing Studio then consider taking a look at PyObjC, which provides far more extensive Cocoa bridging, including to Core Data. I've not used Core Data from Python myself, so can't say anything about that specifically, but IB+PyObjC+py2app is a very nice RAD option in general. Python's a fairly easy language and not too different from AppleScript; it took me less than a week to get competent in it, and I'm not a particularly fast learner. And it only took me only a couple days to get the hang of PyObjC, with no previous Cocoa programming experience other than a bit of Studio work.
