Well, how about *any* scripting in Apple-branded professional applications?

You know the place to complain about that? In the bug report page for the applications you want to be made scriptable. Apple's Applescript group obviously wants all Apple applications to be scriptable. Cricket and the Mail team seem to be pretty gung-ho about Applescript, otherwise it wouldn't be scriptable and Cricket wouldn't spend so much time on this mailing list.

The application groups, however, don't have Applescript high on their priority lists. They need to. The best way for us, the customers, to make that happen is not to tell the Applescript friendly people that we want Applescript, because they already know. We need to tell the people who don't think Applescript is important. If we can convince them that scriptability is more important than anything else they might add (and good scriptability, not some lame, half-implemented dictionary), then they will add it. Not before.
