Maybe a dumb question, but did you make sure that your new plists are loaded? Hint: launchctl.
If you don't load them, then they will get activated after a reboot or logout / login in case of user plists.
Just a thought.

I used to use cronnix to set cron events that I use every day. Cronnix and Lingon have gone away with the advent of launchd and Snow Leopard.

Launchd Editor almost works but not quite. It will edit plists but they never get activated.

Help would be appreciated.
