There is no way to change the fonts listed in the Font Panel. Not via
Cocoa, not via Carbon. Although there is documentation that says you
can use fontManager:willIncluideFont:
it has never been implemented on any version of Mac OS X (not just
10.3 and 10.4, but it wasn't in 10.2 or 10.1 or 10.0 either).
