Remote Desktop will. You just have to select "Hard Disk" and type the name.


Alternatively, the 'bless' command can be used via ssh. There are several variations, but "bless --mount /Volumes/HDName --setBoot" is very easy.

systemsetup can do it too. It's part of the default ARD client bundle on workstations.
