Having spent several days around Christmas trying to do this I'd love to see a solution. Under OS 9 you could use:

tell application "Desktop Printer Manager"
   set the default printer to desktop printer "My favourite printer"
end tell

But Desktop Printer Manager is not compatible with Classic (can't remember the exact words, but that's the gist of it). So short of writing scripts to move or rename various preference files it would seem non-trivial to script changes to the default printer.
