I suggest anyone considering moving to SMB connections do a LOT of testing
with their users...

The best way I have found to migrate this is to copy the data from a SFM sharepoint to a SMB one. That way the Finder splits the forks as needed. Like you note though, the problem is with large archives of files. My largest SFM client has several TB spread out across 20 or so SFM shares. It's simply not a feasible plan because of disk space, and other reasons with some custom software, so they are going to EZIP instead.
