I usualy just use Disk Utility to do multi-session disks. A few hoops to
jump through, but free.
hdiutil can make all sorts of hybrid images to burn as well, but it
probably dosen't hit the "easy" mark for you.
DVD formatting can be funky as many tools will write UDF and, IIRC, that
has no multi-session support.
