You are correct -- aside from improved file compression, and options
such as using pdf/x technology (which is important for us designers
when sending to press), it also takes advantage of Javascript, XML,
and can integrate with other suite + server side coding applications
that Preview would not comprehend or have the tools for.

If so, there's no reason for you to use it. OS X has Preview built

My evidence for this is anecdotal, not technical, but I don't believe
that Preview has all the same display capabilities that Acrobat does.
Isn't it something like the OS has support for PDF 1.5 and the
current version (which Acrobat can use) is something like 1.6? I
believe the current versions of Adobe Creative Suite will output PDFs
that take advantage of some of the newer features.
