I've seen the discussion of disabling iTunes sharing a lot in the past; so I
thought I would share what I have been able to do via the new Parental
Controls in iTunes 5.
iTunes 5 creates a plist files called com.apple.iTunes.secure.plist in
/Library/Preferences. The contents go something like this:

<dict>
<key>disableMusicStore</key>
<false/>
<key>disablePodcasts</key>
<false/>
<key>disableSharedMusic</key>
<false/>
<key>locked</key>
<true/>
<key>restrictExplicit</key>
<false/>
</dict>
In the case above I have disabled sharing and locked it. After being locked,
only an admin user can change the settings. You need to add a key and dict
for each user (by id) that you want to disable sharing (or other stuff) for.
Seems to be working fine in my radmind managed environment.
