Disabling AIM without blocking it



I am a computer tech at a school district, and we want to enable iChat for the students to use within our local network, but we do not want them to use any outside chat protocols. The problem with that is that the teachers and tech staff use AIM to communicate, so we can't block those services. Is there anyway to limit the students to just using Bonjour or Jabber chatting without blocking network traffic?
