Matthew:

You can move the two kernel extensions (kexts) that support the bluetooth
hardware to an "Extensions (Disabled)" folder.

The extensions are:

IOBluetoothFamily.kext
IOBluetoothHIDDriver.kext

You'll have to reboot after moving the extensions.
