Not a spot in the SI, but the serial number is located in /Library/ Preferences/com.apple.iWork08.plist.

Using something like :

defaults write /Library/Preferences/com.apple.iWork08 ProductivitySFLLicense YOUR-SERI-ALNU-MBER

could do it. Not tested though.
