Not a spot in the SI, but the serial number is located in /Library/ Preferences/com.apple.iWork08.plist.
Using something like :
defaults write /Library/Preferences/com.apple.iWork08 ProductivitySFLLicense YOUR-SERI-ALNU-MBER
could do it. Not tested though.

I just tested it and it worked though I am doing it with a single client license. Make sure the key is all lowercase though.
