The problem, actually, is that the XML is part of the project file (the
project.pbxproj one, of course) and thus you can't easily edit it using any
external tool -- you are stick with the terrible thing of editor which PB
offers!

Of course, once the application is built, you can edit Info.plist easily
using more or less anything -- there are plenty of generic XML editors;
myself, I use happily TextEdit, since the propertylist XML format is very
plain and easy to be written manually.

In the build stage there's a problem though. Myself, I use again TextEdit: I
close the project in PB, open project.pbxproj file in TextEdit, find the
"productSettingsXML" part, and do any change I need. It is an ugly hack of
course, but should I have to make all the Services in the editor thing of PB
which does not support even copy/paste, I would find myself in madhouse
first.
