The problem might be here:

return [NSString stringWithUTF8String:value];

UTF-8 agrees with Latin-1 on the subset of characters covered by ASCII, but not on all of Latin-1. There's a good chance that the Latin-1 encoding of "Sölve" is not a valid UTF-8 encoded string at all.

Not just a good chance, but a solid guarantee. Any time a single non-ASCII appears (i.e. without any other non-ASCII octets directly following or preceding it) in a stream of octets, it is not valid UTF-8.
