Maybe someone else can tell me if this was suggested before and why it was declined... or who I should really make this request to.

Apple's mailing lists uses an RFC standard (sorry cannot recall the number at the moment) way of tagging messages in the header, note all of the header entries that start with "List-". I use the List-Id field to sort messages by doing a contains on the list name (e.g. cocoa-dev).
