It depends on your application. Many of the popular applications from Apple are not document based. I.e. iTunes, iCal, Address Book, Mail, etc...

In particular, iTunes is not actually based on Cocoa at all :) It is written in Carbon. (Since there's a Windows version that needs to stay in lockstep with the Mac, it will probably stay Carbon, barring a complete rewrite.)
