When you open iTunes you don't see any "document windows" per se.

We're getting a bit far afield here, but realize that if you double click on a playlist in iTunes (or any item in the left side source list) it will open that playlist/source item in a new window. The sole bizarre exception is one's shopping cart - the store and purchased music items can be opened in separate windows. That's fairly document centric with the document being a playlist/source item.

To bring it back on topic for Cocoa, I don't see any reason other than historical that iTunes is a Carbon app (iTunes began life as a Mac OS Classic app called SoundJam MP3) and iTunes could certainly be ported to Cocoa as a document based app.
