When you open iTunes you don't see any "document windows" per se.

We're getting a bit far afield here, but realize that if you double click on a playlist in iTunes (or any item in the left side source list) it will open that playlist/source item in a new window. The sole bizarre exception is one's shopping cart - the store and purchased music items can be opened in separate windows. That's fairly document centric with the document being a playlist/source item.

Not really, at least not to my way of thinking. Yes you are opening multiple windows that browse the common database, but you don't, then, save the contents of the individual windows in a separate file (or "document") on disk.
