Looks like I was out of date on this. Back on NeXTSTEP, I wanted to do exactly this, and was told that disabling and/or removing the close button wasn't supported. As Vinay suggests, you can retrieve a pointer to the close button with -standardWindowButton: and then send it whatever messages you like.
