Have you looked at what the Big Nerd Ranch provides?

I haven't taken any of their courses, but "Cocoa Programming for Mac OS X"
has got to be one of my all-time favorite books, and the author, Aaron
Hillegass, is one of the instructors at the Big Nerd Ranch.  Instead of
creating a class on your own, you may be able to talk them into teaching a
course.
