The hdiutil manpage says the following about the "-encryption" option:

My question is what other crypto_method's are available (if any) and what CEncrypedEncoding really is. I think it's AES 128 based on DiskCopy's default options, but I haven't been able to confirm that for certain. Can anyone comment?

You are correct; the man page in the developer beta of Panther already reads like this:
-encryption [crypto_method]
specify a particular type of encryption or, if not speci-
fied, the default CEncrypedEncoding. By default, CEncrypte-
dEnncoding utilizes the AES cipher with a 128 bit key.
