The big advantage of pdisk is, you can modify/delete/create single partitions without touching the other ones on this disk.

To put an actual Filsystem onto this new/modified partition, you can use /sbin/newfs for UFS partitions or /sbin/newfs_hfs for HFS ones. This is the same as Finder's "Erase Volume". Well, couldn't find this menu in OS X, but OS 9 features it.

Made one with an UFS an it works excellent.

(Is this
possible from Darwin, or does one need to reboot into MacOS?)

Darwin should work as well as OS X's Terminal. You can't modify a partition with files in use, of course.
