Two newbie puzzles: DVD extra, text

Greetings, and my apologies if these are FAQs. Two puzzles:

First puzzle--DVD Extra. I want to create a DVD that plays on a standard
player, with additional material for playback on computers--html, QT
movies, QT itself, etc. I have a 733 G4, superdrive, and DV Studio. For
the life of me, I cannot see how to add folders to what seems to be an
ordinary IS0 9660 format disk before burning it, except the Web-link
DVD@ccess installer. Am I missing a secret menu option, or do I need to
go out and buy Toast Platinum? If I use Toast to burn the disk, how do I
combine my folders with the output of DVSP prior to burning? Disk image?
Help!

Second puzzle--Text. I want to put a fair amount of scolling text on the
MPEG2 part of the DVD. I know, reading text on TV is ooxymoronic, but I
want to push it a little bit. I've seen pretty clean text on DVD, so I
know it's possible. I suspect the cleanest approach would be to use QT
text tracks, so the original rendering would be directly to MPEG2, but
Apple's encoder wants a video track. I tried putting the text track over
a black background (a one-color GIF), and the text renders cleanly, but
the scrolling is jerky, at least in the preview. (It's not jerky in
QickTime). If I render QT text to DV prior to MPEG2 encoding, it scrolls
smoothly, but the text looks awful. Is there a way to get text tracks to
scroll smoothly in MPEG2, or should I render to the animation codec or
something prior to encoding? Can someone who's done this before point me
in the right direction?

Thanks, and apologies again for the newbie questions,
-Steve
