There are NO software encoders right now doing the kind of quality that a
top hardware encoder can do. Your argument is like saying that one can do
the same quality work in AE as one can do on a Quantel set-up. Sure, it's
POSSIBLE, but when you have real-time feedback, you can make superior
judgements about timing, object placement, etc, that allows you to be more
creative, in less time, which means MORE money for you. For very complex
things, AE may be the only solution, and the same for a software encoder,
like Heuris, that allows for very complex ECLs, including I-frame
insertions, and filter mode changes. But the trade-off in speed in the
realworld isn't worth it, so virtually no one does that. No one.

As far as is it professional, well, it depends on your clients. Ours are
sophisticated enough to know that what they get from the Apple encoder
sucks. I can't charge for it, so I don't use it. If your clients can't tell
the difference, then by all means use the Apple encoder. It works well and
is very fast.

You clearly are confused about some of this and are missing some key
technical information. I just loved that Digibeta thing. You're so missing
it. Anyway, it's nice to see you are in love with the Apple encoder, and I
wish you luck with your little projects. Meanwhile, some of us have to make
a living.
