Don't use a capture card. Use an analog to DV converter, as mentioned in another post/

Use iMovie to edit the video, then export it to iDVD. Use iDVD to burn the DVD-R.

- Is the superdrive in my dual 800 in fact going to burn a DVD? Where's a
good place to get recordable DVD's?

It does in mine. Very well, as a matter of fact. I think that the 5 for $30 deal direct from Apple is one of the better prices around. See http://store.apple.com.
