We've had good experiences with using X-Wall based encrypted Firewire/USB external hard drives. With the hardware encryption key plugged in, the drive works like any other hard drive does, including being bootable if needed. Without the key plugged in when the drive powers up, the drive won't mount at all (our drives also have a light on the front that shows up as yellow if the key isn't in.) Keeping track of the key that plugs into the hard drive is central to maintaining the security of the data, though that can be remedied by making sure you have it with you at all times (mine's hanging from my neck on a lanyard like my badge is.)
