Here's the sole difference for my Terminal configuration:
  Escape non-ASCII characters: OFF.

I mention this because I've never seen the problem you describe, and
because the examples you gave both seem to have non-ASCII chars in them
(the \nnn sequences).

What are your other Window Settings:
  Buffer
  Display
  Window

And in Terminal Preferences, what is your terminal type ($TERM)? Mine is
vt102.

Also, does the problem occur if you copy and paste a long command-line, say
from TextEdit, into Terminal, rather than typing one in by hand?

Instead of typing or pasting random gibberish, I suggest using a
well-formed and valid java command-line, simply replacing the initial
'java' with 'echo', which should then work when pasted into Terminal,
unless the first option mirrors a valid 'echo' option.
