2) I know that Java now has an ability to manipulate image metadata, but I don't know if
it is considered "core java". Is this available on the Mac? Any good docs? (From a glance
at Sun docs, it seems to be an API best understood through examples--and I didn't see any
in the docs I was looking through.)

The ImageIOAPIs are "core" as of Java 1.4

5) Finally, any example code for pulling out frames from video files? (I assume this
would need to use the OS X-Java interface, and I know nothing about OS X APIs.)

JMF might work .. for some file formats, QuickTime would be better, you can call Quicktime from Java with the bindings Apple provides.
