Since the configuration consists of multiple parts, I suggest creating a
single pre-configured ready-to-run JAR or app-bundle out of all those
parts, including specific test data-sets. That will significantly reduce
the barrier for anyone wishing to run the trial.

I also suggest performing some baseline profiles of the app on specifically
provided test-data sets, which are designed to show the problem. Profile
the app on both platforms and publish the profile data, in both raw and
summary forms. The goal is to be able to look for differences in relative
performance costs.

In addition to the obvious platform-descriptive Java properties ("os.*",
"java.*.version"), be sure to include all the salient characteristics of
the hardware in your profiles and performance reports. The 'sysctl'
command on Mac OS X can provide many details in machine-generated form,
thus eliminating human errors (of omission or commission). Type these
commands in Terminal and paste the output into every report:
sysctl hw
hostinfo

The 'sysctl' command is in /usr/sbin, and 'hostinfo' is in /usr/bin, so
adjust your PATH accordingly.

For additional machine parameters, see 'man sysctl' or type 'sysctl -a'..
Unfortunately, there is no 'man hostinfo' that I can see.

I have no idea what commands one could use on Windows to get this kind of
info, or whether it's even possible.
