Full Screen Kiosk Style Application

I want to run an application as a sort of kiosk. I already have this
working on Windows using a fullscreen window and a jni extension that
installs a global keyboard hook but i need to do the same thing on Mac OSX.

First, how do I create a full screen window on the Mac including covering
the menu bar?

and second, how do override system key combinations and mouse actions that
invoke the dockbar, etc?
