First, I don't mean to be pejorative but RTFM. It has an abundance of
information which answers many if not all of your questions. Answers for
questions like "does mod_jk for TC 5 exist yet" are best found on the
Jakarta Tomcat site (certainly not on the Apple java-dev list!) This
information can be found at:
http://jakarta.apache.org/tomcat/

In fact if you go to the Tomcat resources page (third item down on the
left):
http://jakarta.apache.org/tomcat/resources.html
where you will find prominently listed near the top of the page
mod_jk HOWTOs by John Turner
which exhaustively discusses the many ways of how to setup Tomcat to run
behind the Apache web server .

One HowTo which might be particullarly germane is:
http://jakarta.apache.org/tomcat/tomcat-4.1-doc/jk2/jk/aphowto.html
which not only has a plethora of information on Apache/Tomcat integration
and even discusses how to build (if you want) mod_jk on OS X (10.2 but
works for 10.3).

Another indispensible resource is the Tomcat FAQ:Connectors which has an
abundance of information about connectors and how to use them:
http://jakarta.apache.org/tomcat/faq/connectors.html

Use the source.

good luck!

Steven
