This explains why 'su' worked but 'sudo' didn't:
'su' changes HOME, but 'sudo' does not.

Since the ~/Library/Java/Extensions/ location is relative to HOME, and
there isn't one in any account's home-dir by default, both the root account
and the new account didn't see the stuff you'd tossed into your own
extensions-dir.
