I'm asking, because we haven't setup the source build for Mac OS X (yet).
(Search for "Source Build" on the download page for a particular build, e.g. M7;
the link instructions explains how to do it for the other platforms).

Do you want to volunteer for creating a script/setup for Mac OS X? :-)

But anyways, if you just want to self-host and then modify some plugins,
here are the steps:
- start Eclipse with empty workspace
- switch to Java perspective
- from the Run drop-down menu in the tool bar ("running man") select "Run..."
and create a new launch configuration of type "Run-time workbench"
- press "Run" button

-> a new instance of Eclipse launches: you are self-hosting!

To modify a plugin:
- connect to the CVS repository ("dev.eclipse.org")
- "Check out" the plugin you want to modify and wait until source been loaded into workspace
- modify the source
- launch previously created launch config.

-> Eclipse launches with your modifications.
