Running headless?
  java -Djava.awt.headless=true ...

I'm not running it with 'java' but my own C++ launcher. I thought that because I had my own CFRunLoop I might need some fancy CoreFounding API calls to stop the application appearing in the dock but I'm pleased to say that setting java.awt.headless to true does still work, thank you!
