Shark.app, latency (man latency), fs_usage (man fs_usage), sc_usage
(man sc_usage), etc.
Basically something is either holding off iTunes from filling audio
buffers in time, preventing iTunes from getting file data in time, or
holding off CoreAudio from being able to supply the hardware with data
in a timely enough fashion.
I don't use eclipse myself and have only ever experienced iTunes
stutter when going in and out of a OpenGL based screen saver (lots of
hardware communication taking place during that).
