So is this a possible work-around?
  Replace the custom launcher with the standard Apple launcher stub,
  and fill out Info.plist with a proper Java dictionary.

This may require collecting other information from other files being read
by the custom launcher, so it's probably not an exercise suitable for
everyone.  On the other hand, if it's done correctly once, then the
procedure and the results can be placed on the web, or even turned into
code.

I suggest this only as a last-resort work-around, if nothing simpler works.
