The Intel based Macs still run Mac OS X... so the only option is Apple's JVM unless Sun implements one that works natively in Mac OS X.
Sorry when I read JVM I was thinking JDK... yeah Apple has used a port of HotSpot and now it looks like they can use Sun's Intel HotSpot (not sure what tweaking is needed to bind it to Mac OS X).
